Same for the tables, you can set the background colour but have to edit the HTML if you want to change the text colour. The usability could be massively improved with some additional formatting options

Persimmon Horse: Hi Emma. It's doable--can select text (within same cell) and then apply "Text color" (or "Background color" to highlight, etc. from main (i.e., non-table) menu). (I use hex numbers to match our branding.)
But completely agree with your "the usability could be massively improved, with some additional formatting options"!

Hi Beautiful Dingo & Kind Lark Thank you for your request. We currently have the option to add the Basic text colours in the WYSIWYG editor.
To achieve the text colours in Markdown, use the following HTML code:
<span style="color: Brown;"><span> SAMPLE TEXT <span style="color: Brown;"></span>

Hi Hilde. I agree we need much better word processing/WYSIWYG options/controls!!!
FYI in the meantime, there are text (Text color) and highlight (Background color) options (next to each other, from the "More text" menu.
