When activating JWT we can't see any analytics :( Readme also has the jwt feature and they do provide analytics per user. Please see how this can be done.

Totally agree that this should be added. It feels like a regression compared with the other analytics possibilities.
Technically it shouldn't be that difficult. During the JWT-SSO negotiation the email address (or other identification) of the reader is already passed along.
