Override global article settings on a per-article basis

If I have the KB automatically set an article status to New when it's published or updated, I should be able to manually override that setting on a per-article basis. Currently I can't do that, which is annoying.

To better understand the requirement, could you please clarify a few points?
-Should authors be able to manually override the "New" status for an individual article after it is automatically applied?
-Should the override allow authors to remove the "New" status immediately, or also set a different status?
-If the article is updated again after the manual override, should the automatic "New" status be reapplied, or should the manual override remain?
-Would you expect this control to be available to authors, editors, or admins?
-Could you share an example of when an article is automatically marked as "New" but you would not want it displayed as New?
